Celery is not one of my favourite vegetables, but when I have leftover celery, I like to make stuffed celery sticks. They’re great snacks and they’re very quick and easy to make. I’ve posted two versions of stuffed celery sticks here, one sweet (kid friendly) and one savoury that’s sophisticated enough to entertain with.
Blue Cheese Stuffed Celery Sticks Recipe
celery stalks, washed, dried and cut into desired length
blue cheese (I use Rosenborg Danish Blue)
cream cheese, softened at room temperature
whipping cream (optional)
black pepper
toasted walnut halves
Use equal amounts of cream cheese and blue cheese (how much you use depends on how many celery sticks you’re making). If you’re using a stronger blue cheese, use less of it. Mix the cream cheese and blue cheese together well. If necessary, add a tiny bit of whipping cream at a time, mixing well, until you get the desired consistency. Mix in a pinch of black pepper. Spread the blue cheese mixture into the celery sticks. Top with walnut pieces in a row and spread out a little bit.

smooth peanut butter
raisins
Spread peanut butter into your celery sticks. Then place raisins on top of the peanut butter, in a row and spread out a little bit.
