Stir Fried Beef and Enoki Mushrooms

I first tried this combination in a small Chinese restaurant in Markham, ON.  It’s incredibly simple and the sauce makes it great with rice, so I recreated it at home.


Stir Fried Beef and Enoki Mushrooms Recipe

1 1/2 lbs (approx.) flank steak or sirloin, cut against the grain into thin strips about 1.5 inches long

1 package (3.5 ounces / 99 g) fresh enoki mushrooms (or canned enoki mushrooms drained and rinsed)

1/2 a small onion, diced finely

2 slices of ginger cut into thin strips

2 garlic cloves, minced finely

2 tbsp vegetable oil

for marinade:

1 tbsp soy sauce

1/2 tbsp shaoxing wine

1/2 tbsp cornstarch

for sauce:

1 tbsp kecap manis (ABC brand, this is an Indonesian thick, sweet soy sauce)

1 tbsp shaoxing wine

1/2 tbsp soy sauce

1/2 tbsp dark soy sauce, mushroom flavoured

1/2 tbsp oyster sauce

1/2 cup water (or beef broth if you want more flavour)

dash of sesame oil

3/4 tbsp cornstarch

large pinch of ground black pepper

Marinate the beef for 30 minutes to 1 hour.  Meanwhile, mix all of the ingredients for the sauce together and cut off the clumped roots from the fresh enoki mushrooms.  Roughly break apart the enoki mushrooms so that they are not all clumped together.  Heat a wok over high heat.  Add the vegetable oil and when it is very hot (this will take just a few seconds), add the ginger and onion and stir fry for about 30 seconds.  Add the garlic and give it a few more quick stirs.  Then add the beef and stir fry until it has changed colour but is not cooked all the way through, about 2 to 3 minutes.  Dish out and set aside.  Add the sauce to the wok and bring to a boil.  If you prefer a thicker sauce, simmer for 30 seconds to 1 minute.  Otherwise, add the enoki mushrooms to the sauce.  Give it a few quick stirs and cook for about 30 seconds to 1 minute.   Using a slotted spoon or chop sticks, dish out the mushrooms and set aside, leaving the sauce behind.  If the sauce is too thick for your preference, add some water a little bit at a time.  Bring the sauce back to a boil and add the beef.  Give a few quick stirs until the beef is well coated and cooked through, about 1 minute.  Do not overcook the beef.  Plate the beef, add the mushrooms on top of the beef, and serve immediately with rice.
